bag (32 oz) frozen potato nuggets
can (15 oz) Progresso™ black beans, drained, rinsed
can (4.5 oz) Old El Paso™ chopped green chiles, drained
cup Old El Paso™ Thick 'n Chunky salsa
cups shredded Cheddar or Colby-Monterey Jack cheese (6 oz)
medium avocado, pitted, peeled and cut into chunks
Additional toppings, as desired (thinly sliced green onion, chopped fresh cilantro, seeded and chopped)
Heat oven to 450°F. Arrange frozen potato nuggets in single layer on ungreased large cookie sheet. Bake 24 to 26 minutes until hot and crisp. Line another cookie sheet or pizza pan with cooking parchment paper or foil.
In medium bowl, mix beans, chiles and salsa. Spread half of the potato nuggets on lined cookie sheet. Spoon half of the bean mixture over potatoes. Sprinkle with half of the cheese. Top with remaining potatoes, bean mixture and cheese. Bake 5 to 10 minutes or until cheese melts.
Top with tomato and avocado. Serve with sour cream. Top with additional toppings as desired.
One Pan Keto Cheesy Jalapeño Chicken
One pan dinners are the best. I love them even more than slow cooker dinners! When I started Keto I was a little bummed because my “go to” easy one pan dinners were off limits. So, I decided to work on some easy, delicious one pan low carb, keto-friendly dinners for busy weeknights!
This One Pan Cheesy Jalapeño Chicken is ready in under 30 minutes and loaded with flavor. It reheats perfectly so it is great for weekly keto meal prep or a freezer friendly dinner.
This would be perfect served over some cauliflower rice to keep things keto. However, if you aren’t worried about carbs I would totally serve this with some warm tortilla chips or Mexican rice!
- 1 (10.5 ounce) can condensed cream of chicken soup*
- 2 cups sour cream
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
- 2 cups shredded Cheddar cheese
- ⅓ cup sliced green onions
- 1 (30 ounce) package Ore-Ida® Shredded Hash Brown Potatoes
- 2 cups crushed corn flakes cereal
- ¼ cup butter, melted
Preheat oven to 350 degrees F. Coat 13x9 baking dish with nonstick cooking spray.
In a large bowl, whisk together soup, sour cream, salt and pepper. Stir in cheese, onion and hash browns until well mixed. Spoon evenly into baking dish.
In a medium bowl, mix together cereal and butter. Sprinkle evenly on top of hash brown mixture.
Bake uncovered for 45 to 50 minutes, or until hot and bubbly. Allow to rest for 5 minutes before serving. Season with additional salt and pepper to taste if desired. Garnish with additional sliced green onion if desired.
* TIP: If desired, substitute condensed cream of chicken soup or condensed cream of turkey soup.
How to make cheesy potatoes
If you haven’t tried this recipe, it’s a must this year! We always make it for Thanksgiving, Christmas and Easter (served with ham, vegetables, and homemade rolls).
- Preheat oven. Preheat oven and butter a 9吉″ baking dish. Set aside.
- Mix ingredients together. Combine potatoes, green onions, sour cream, cream of chicken, salt, pepper, 1/4 cup melted butter and cheese in medium bowl. Stir, then spread into baking dish.
- Add topping. Top with extra cheese (if desired) and crushed cornflakes. Drizzle remaining melted butter on top.
- Bake in oven. Bake for 30 to 40 minutes, or until golden brown and bubbling hot.
TIP: You can also make crockpot cheesy potatoes if you’d like. Simply mix the potatoes, sour cream, cream of chicken, butter, half of the cheese and spices in the slow cooker. Cook on low for 4 to 5 hours. Then sprinkle on the remaining cheese and cook for about 10-15 more minutes until bubbly.
Cheesy Beef Empanadas
Many different cultures have put their own spin on these stuffed pastries. But the empanadas I grew up eating aren&rsquot traditional by any particular cuisine&rsquos standards. While Mexican empanadas are usually made with masa, my grandma&mdasha woman who grew up in Culiacán, a city in northwestern Mexico&mdashmade hers with pot sticker wrappers. (She liked a thin pastry and found stretching and rolling the dough to her desired thickness too difficult.)
During the development of this dish, I figured that if you&rsquore searching for an empanada recipe, you&rsquore mostly not looking to fry them in pot sticker wrappers. So, our associate food editor (and pastry queen) Makinze Gore developed an amazingly easy and flaky homemade dough.
The filling is loosely adapted from my grandma&rsquos top-secret recipe. The main idea is there: ground beef flavored with sautéed onion, garlic, oregano, tomato, and pickled jalapeños. But if you really want to up your game, I highly recommend adding a splash of red wine vinegar, some finely chopped capers and green olives, and a good squeeze yellow mustard. It&rsquos the María Picos Clark way.
Pot sticker wrappers
If you'd like to go the pot sticker route, fill each wrapper with about 1 teaspoon of meat. (If you add too much filling, the wrapper will break.) Dip a finger in water and run alongside the edges of the wrapper, then fold and seal with tines of a fork. Heat vegetable oil in a deep pan (or a wok, like my mom), and fry in batches until empanadas are deeply golden and bubbly on surface.
